How to make Vegan Sushi Rolls at Home
In this recipe, I will share with you how to make Vegan Sushi Rolls at home especially if you are a beginner and have never made it before!
Sushi Rolls are my go-to meals when I have to serve some snacks for friends and families coming over and they always love it!
Why do I love Sushi? Because it is super easy to make and so healthy!
You do not need so many ingredients to make it too, it is so versatile you can play on what you want to stuff it.
Today, I am going to share with you my 3 most favorite ways to make my Sushi Rolls.
Avocado, Tofu, and Mango will be the major ingredients of my sushi then the base vegetables are the Cucumber, Carrots, and Spinach.
Also, you can play with the combinations. My personal favorite is a combination of Tofu and Avocado.
I love the combination of Salty and Creaminess of Avocado, I thought it is the best!
So now, let me go ahead and share with you how to make Vegan Sushi Rolls at Home!
INGREDIENTS OF VEGAN SUSHI
- 10 Sheets of Nori
- 3 Cups (250 Grams) of Sushi Rice
- 4 Cups of Water
- 2 Tablespoon Rice Vinegar
- 1 Tablespoon Maple Syrup
- 1 Carrot
- 1 Cucumber
- 2 Cups Spinach
- 1 Mango
- 2 Avocado
- 1 Block (200 Grams) Firm Tofu
- Pinch of Salt
- Pinch of Pepper
*This recipe will make 10 sushi rolls or 80 pieces of Sushi
INSTRUCTIONS FOR VEGAN SUSHI
Prepare the ingredients.
Wash and cook the Sushi Rice.
Combine the Vinegar and Maple Syrup in a bowl and mix it.
Add the Maple Syrup and Vinegar Mixture to the cooked rice and mix it well.
Prepare the Tofu, season it with a pinch of salt and pepper and cook it until golden brown.
Prepare the vegetables and fruits.
Start rolling your sushi.
Cut the Sushi carefully with a sharp knife.
Serve with Vegan and Gluten-Free Soy Sauce and Enjoy!
NOTES IN MAKING VEGAN SUSHI
COOKING YOUR RICE
In cooking your Sushi Rice, you can use a Rice cooker or a normal pot. However, we like to use a Pressure Cooker because it is faster to cook rice.
If you are using a Pressure Cooker too, it takes about 5 minutes to cook it.
Put your fire in Medium Heat and wait about 2-3 minutes to build up the pressure inside the pot.
After 2-3 minutes you will hear the “Scream”, I like to call the noise the pressure cooker makes that way because ours is noisy, you can put the fire in the lowest and wait for about 2 minutes then you can turn off the fire.
When the noise from the pressure cooker is gone, you can open it and give your rice a good mix.
COOKING YOUR TOFU
In cooking the tofu, I like to dry it a bit with some paper towels.
Drying the tofu will make your tofu crispier when cooked.
If you like it crispy, you can do a tofu press and leave it overnight.
However, I like my tofu somewhere juicy and crispy in between so I don’t do it.
If you do not want to use oil in this recipe, alternatively you can also bake your tofu.
I prefer to pan-fry as it is faster that way.
PREPARING THE VEGETABLES AND FRUITS
Each sushi will have 3 vegetables as a base; Carrots, cucumber, and Spinach.
I like to cut the cucumber in half and cut it thinly lengthwise whilst, I like to shred the carrots instead of cutting it like the cucumber because I find carrots a bit hard and shredding it instead makes it easier to bite at least for me, but if you prefer to cut it like the cucumber it is totally fine.
For the Avocado, I like to cut it lengthwise with about half-inch thickness.
I like to do it this way because I like to feel the avocado in my sushi so I like it thick.
The same way goes for mango. Mangoes in Europe are enormous but they are not as tasty as the Mangoes in the Philippines.
So in this recipe, I only used half of the Mango and the rest I used in our dessert, Mango Sticky Rice.

ROLLING THE SUSHI
Today we made Sushi 3 Ways; Tofu, Avocado, and Mango.
When rolling your Sushi, your bamboo sushi mat should be lined horizontally.
Place your Nori Sheet on top of your bamboo sushi mat.
Your Nori Sheet will have a shiny and matt side.
Make sure the Matt Side is facing you.
Nori Sheet will also have a line, make sure it is lined horizontally like your sushi mat.
Also, make sure you prepare a bowl with water.
You will have to wash your fingers from time to time because the sushi rice is sticky and the water makes it easier to spread it on the nori sheet.
When adding your rice, start in the middle of the Nori sheet and spread it evenly but make sure you are not putting too much, you don’t want your sushi to be so thick that it will be difficult to roll and close it.
Also, make sure that you leave space on the top and bottom of the Nori Sheet so you can easily roll and close your sushi later.
On top, I like to leave about 1 inch and at the bottom, I like to leave 2 Inches.
Now when you are adding your filling, make sure you put just enough.
I know it is very tempting to stuff your sushi but it will be harder to roll and close it if it is full so make sure to put just enough.
Now when you roll your sushi do it slowly. Start with the first roll and make sure you are ticking in all your filling inside before making the second roll.
When you do the first roll correctly, succeeding rolls will be much easier.
Sometimes, you may need to add a bit of water using your finger to just wet the end of your Nori Sheet to make the closing easily.
This happens when you are using mostly dry ingredients or your rice has dried up already.
It is not a big deal, just wet the end of the Nori Sheet and you are good to go.
CUTTING YOUR SUSHI
Cutting the Sushi can be tricky, but the secret is to have a sharp knife.
Also, make sure you have a wet paper towel or a normal towel close to you.
You will have to wipe the knife clean now and then so you can cut the sushi rolls without a problem.
