Crunchy Vegan Peanut Butter Cookies Recipe
Peanut butter! I will be sharing with you a very simple with only 5 ingredients: Crunchy vegan peanut butter cookies recipe!
We love our Peanut Butter cookies simple so we are only using 5 Ingredients in this recipe.
These peanut butter cookies are perfect for snacks or can be served during breakfast when you are pressed with time.
I love to have mine with some freshly squeezed orange juice or my favorite morning smoothie!
INGREDIENTS OF Peanut Butter Cookies
- 3 Cups of Gluten-Free Flour (we are using Buckwheat flour)
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt (add more if you want it saltier)
- 2 Cups Peanut Butter
- 2 Pieces of Banana
*this recipe makes 24 small pieces Vegan Peanut Butter Cookies
INSTRUCTIONS FOR Peanut Butter Cookies
Prepare your Ingredients and preheat your oven to 180C or 350F.
Start sifting your dry ingredients; 3 Cups of Gluten-free flour, ½ teaspoon of Salt, 1 Teaspoon of baking soda.
Mix the dry ingredients well to make sure all are well incorporated.
Start mashing the bananas.
Add and mix the Peanut Butter to the Bananas but leave some for garnish later.
Combine your dry and wet ingredients and mix thoroughly until a dough is formed.
Add a little bit of water if the dough is too dry.
Take a small dough and make a ball and flatten it using your palm and make a criss cross design on top using a fork.
Line them on to the baking tray.
Bake it for 10-15 minutes.
Garnish it with more peanut butter on top and finish with some crushed peanut butter (because why not?)
NOTES IN BAKING PEANUT BUTTER COOKIES
In this recipe, I am using buckwheat flour so my cookies are more brownish in color.
If you are using a normal white flour, your cookie will have the traditional nice golden brown in color.
But I don’t mind the color of my cookies. I love using buckwheat flour because it is gluten-free and contains a lot of vitamins and nutrients inside like Vitamin A and B, and calcium, most importantly it is high in protein content!
I also did not use any sweetener in this recipe because I am content with the salty and creamy flavor of my homemade peanut butter. The bananas will add natural sweetness to the cookies which I really love.
However, if you like yours to be sweeter, feel free to add your sweetener choice, just remember to adjust the flour as you want to make a dough rather than batter.
I usually bake my cookies for about 10 minutes only and I get lovely and crunchy Peanut butter cookies. However, I know that ovens are not all the same so you may have to adjust your baking time depending on what oven you are using.
Feel free to also design your cookies if you have a cookie cutter. Baking these cookies are super easy and can be a perfect bonding time to share with your kids! You can let them design their own cookies too!
